冬虫夏草主要用于补肾润肺、益气生津、平衡阴阳、延缓衰老、对防癌抗癌、贫血虚弱、乙肝、提高人体的免疫力起固本作用。最适宜以食疗方式进补，每次 2 克至 3 克，炖鸡、鸭肉类均宜。

用冬虫夏草补虚，要因人因病而异，或单药服用，或配合他药同用。可以煎水、炖汤、做成药膳服食，也可泡茶等。例如有腰痛虚弱、梦遗滑精、阳痿早泄、耳鸣健忘及神思恍惚诸症，可单用冬虫夏草每次 2 克，研末，空腹送服，每日早晚各一次；也可用冬虫夏草 5 克，配杜仲、川断等，煎汤饮服。属病后体虚，或平素体虚容易感冒、畏寒自汗者，可常用虫草与鸡、鸭、牛、羊肉等炖服。如用冬虫夏草 5 ～ 10 枚，老公鸭一只，去除肚杂煮烂食用，可增强体质。或每天用虫草 4 枚，煎汤后空腹服用。

冬虫夏草简易食用方法- -

配方冬虫夏草10克，鸡肉250克。

制法

1 将虫草用水洗净，与鸡肉同放锅内，加水适量，煮20－30分钟，虑出汤汁，再将虫草，鸡肉加水煮三次，每次均过滤出汤汁。

2 将全部汤汁用文火煎熬至浓，加盐少许即成。

功效益智慧，补肺肾。适用于智力减退，记忆力差，肺虚等症。

制作:(1)将冰糖加入水溶化，打入鸡蛋，搅成蛋浆。

配方冬虫夏草10克,老雄鸭一只(1500克),绍酒15克,生姜5克,葱白10克,胡椒粉3克,盐5克

制法

1鸭宰杀后去毛及内脏,洗净,在沸水锅内略焯一下,再捞出用凉水洗净;虫草用温水洗净泥沙;姜葱洗净切片待用。

2将鸭头顺颈劈开,取8枚虫草纳入鸭头内,再用棉线放入缠紧,余下的虫草同姜、葱一起装入鸭腹内，放入盅子中，再注入清汤，加盐、胡椒粉、绍酒调好味，用湿绵纸封严盅子，上笼蒸约15小时即成。

功效补肺肾，止咳嗽。用于妇女保健食用。

1．冬虫夏草炖鸡：每次用冬虫夏草4枚，鸡肉150克，水适量，隔水炖熟后，吃肉饮汤，每天或隔天服食1次。有补气血，益肺肾之功效，适于各类视力减退者服食。

2．小乔炖白鸭：据传，始于三国时期。东吴都督周瑜率军驻扎柴桑，其妻小乔曾用冬虫夏草、泽兰，同白鸭炖制滋补菜肴，供周瑜食用。当时称为"柴桑鸭"。后来又称小乔炖白鸭，是九江的传统名菜。特点：用白鸭和冬虫夏草炖制而成。成菜汤汁浓醇，肉质酥烂，香而肥鲜，富有营养。制作方法：将白鸭宰杀，治净，入沸水锅中略焯取出，除去血沫，放入瓦钵或砂锅内，加洗净的冬虫夏草和泽兰、姜块、葱结、绍酒、清水，烧沸后，转用小火炖，至鸭肉酥烂，汤汁浓醇即成。

3．冬虫夏草炖乌鸡：从冬至开始每逢初九的第一天，取冬虫夏草9克、乌鸡一只，脱毛去内脏加水适量、不放任何佐料，下锅同煮。炖烂后吃肉并喝汤。一顿吃不完可分两次吃。据说没有合并症的老慢支，照此法连服3个冬天，有特效。

4．虫草鸭：虫草鸭采用名贵中药材冬虫夏草与老雄鸭烹制而成。取老雄鸭洗净去脏，用筷子削尖，在鸭身上扎约三至五厘米深的孔，将虫草的虫体部份塞入孔中，另配黄芪、胡桃仁、五味子等，置于砂锅中文火慢炖一至两小时。主治肺肾两虚，喘咳短气，气阴不足，免役能力低下，小儿智力发育不全。

1虫草全鸭:

冬虫夏草10克、老雄鸭1只、料酒、生姜、葱白、胡椒粉、食盐、味精各适量。将鸭宰杀，去净毛和内脏，清洗干净剁去脚爪，在开水中氽一下，捞出晾凉；冬虫夏草用温水洗净；生姜、葱切好待用。将鸭头顺颈劈开，取冬虫夏草8--10枚，装入鸭头内，再用棉线缠紧，余下的冬虫夏草和生姜、葱白一起装入鸭腹内，然后放入盆中，注入清汤，用食盐、胡椒粉、料酒调好味，用湿棉纸密封盆口，上笼蒸约2小时，出笼后去棉纸，拣去生姜，葱白，加味精即成。其功效为：补肺肾，益精髓。适用于虚劳咳喘、自汗盗汗、阳痿遗精、腰漆软若、久虚等症。

2虫草红枣炖甲鱼:

由甲鱼重500--1000克一只、冬虫夏草10克、红枣30克加适量配料炖制而成。将红枣洗净，用清水浸涨；冬虫夏草洗净，用温水发。宰杀甲鱼，挖去内脏，用沸水烫去皮上膜，切成四块，放锅中煮沸后捞出，洗净。将甲鱼、红枣、冬虫夏草一并放碗内，加料酒、精盐、葱、生浆、大蒜瓣及鸡汤，上笼蒸二小时，出笼，拣去葱、生姜，加味精调味，分数次佐餐食用。甲鱼同红枣、冬虫夏草一并炖食，营养丰富，滋补力强，常食之，能有效的增强体质，增进健康，振奋精神。

3汽锅乌骨鸡：

汽锅乌骨鸡原料用乌骨鸡1只、冬虫夏草10克、党参10克、黄精15克、熟地15克及玉兰片、香菇、生姜、葱、黄酒、精盐、味精各适量。将洗净的鸡切做块，与冬虫夏草、黄精、熟地、党参、一起放汽锅内, 加入各种配料，再加少许清水，上蒸锅蒸2--3小时，分餐食用。冬虫夏草合乌骨鸡、党参、黄精、熟地等，补益力大，颇适宜于眩晕腥忘、神疲乏力、遗精盗汗、阳痿早泄、妇女月经不调和性功能低下者食用。

4鸽肉炖冬虫夏草:

适于肾精亏虚、健忘、眩晕、足痿无力和腰酸疲乏者用。用鸽子两只、冬虫夏草15克、淮山药15克、桂圆肉10克、银耳15克、莲子15克及生姜、冰糖适量。将鸽子宰杀后，放入七十度的热水中稍浸烫，拔毛除内脏，洗净并放入沸水中片刻，沥干水备用。莲子倒水内略煮，用筷子快速搅动，去除外皮。银耳用温水浸透、洗净，将莲子、鸽肉放炖碗内，上铺生姜，再放入冬虫夏草、淮山药、桂圆肉，最后放上银耳、冰糖加入沸水至八成满，盖好，置沸水中隔水炖3小时。吃鸽子、冬虫夏草、淮山药、桂圆肉、莲子、喝汤。

5冬虫夏草炖黄雀:

冬虫夏草6克，黄雀12只，生姜2片。将黄雀去毛和内脏，洗净，切块。将冬虫夏草、生姜片和黄雀块放入瓦锅中，加水适量，慢火炖2--3小时，以黄雀肉烂为度。将药和肉一起服食。补脑兴阳，填精益髓。适用于中老年人阳气衰败、肾精亏损所出现的身体虚弱、阳痿、早泄、性功能低下等症。

6虫草鸭块汤:

由冬虫夏草与雄鸭肉炖煮而成，局有补虚助阳的作用。先在碗中加适量清水、黄酒、葱、生姜、胡椒粉及精盐调好味，将鸭切好块，装盆，用竹签将鸭块插若干小孔。每空内插入洗净冬虫夏草1根，然后加调好的汤料，盖好上笼蒸1--2小时，加味精调味，吃冬虫夏草、鸭肉，喝汤。

7虫草炖乌龟:

取约250克重的龟一只，去硬壳、内脏，洗净，切作块，放沸水里氽透；捞出放锅内，加入冬虫夏草30克、火腿片30克、瘦猪肉120克，同时放入调料葱段、生姜片、黄酒、盐适量。盖好，用文火炖至肉烂，调入味精，即可食用。此两物一并炖制食用，有助于肺结核阴精亏虚，低热，咳嗽，咳血，心烦，失眠，道汗，腰漆酸痛等病症的治疗康复。健康人食之，亦有强身健体、延年益寿的作用。
